Sustainable Sturgeon Selection

The journey begins in the pristine waters of the Caspian Sea, where beluga, osetra, and sevruga sturgeon are carefully selected. Only mature sturgeon, ready for roe extraction, are chosen to ensure the best quality caviar. Sustainable fishing practices are strictly followed, including regulated harvesting limits and eco-friendly methods. These practices help protect the fragile ecosystem and ensure the long-term survival of the sturgeon population.

Gentle Roe Extraction

Once the selected sturgeon are brought to shore, the roe extraction process begins. The fish are handled with utmost care to minimize stress, preserving the quality of the roe.
