Even after Benoit Violier’s terrible death, his tenacious wife Brigitte has continued to run the three-Michelin star restaurant, driving it to even greater heights of recognition. Franck Giovannini, a young chef from France, is already winning over hearts (and stomachs) with his innovative take on haute cuisine. Giovannini, confident in his position as Violier’s successor, relies on his decade of working with the renowned chef to maintain the restaurant’s well-deserved reputation as one of the finest in Switzerland. It’s just a short journey west from Lausanne to see this unassuming mansion. In addition, the service is excellent, the personnel is kind, and the food is extremely delicious. Giovannini develops taste combinations that are out of this world, as well as visually spectacular displays. The components for these well planned prix-fixe lunches are essential: meat from the Pyrenees, cardoons (an artichoke-like vegetable) farmed in the area, among other things. Make sure to pace yourself and allow time and space for options from the massive cheese cart or angelic desserts, which will be available. Make your reservations as far in advance as possible, since lunch may be your only choice.
