The avant-garde one-table, ten-seat restaurant of French chef Paul Pairet has won so many gushing praises that it is still in operation. The Ultraviolet, which is housed in a warehouse at a top-secret location, is half IMAX theater, part molecular gastronomy experience. With surround sound music, films projected on screens and walls, lighting cues, aromas emerging from a cutting-edge fragrance diffuser, and intriguingly formulated liquids, each of the 22 technically challenging courses is complemented by a variety of sensory stimuli. Parties are restricted to a maximum of ten people, and there is only one sitting available every night.
