Since the late 1970s, when Michel Guérard’s restaurant fired the first shots of the nouvelle révolution, the excellence of this suave culinary landmark has been a given (so much so that breakfast here outperforms dinner at most other establishments); as a result, a visit to Les Prés d’Eugénie continues to be a necessary notch on any gourmand’s belt of culinary accomplishment. Guérard’s trademark flare allows minceur cuisine—a slimmer’s dream—to mingle with the luscious gastronomy of the Landes area (langoustines adorned with foie gras and mesclun greens, lobster with confetti-ed calf’s head, to name a few examples). The elegant Second Empire–style hotel, nestled in a beautiful garden, exudes grandeur, and the rooms are decorated in a formal manner. Rooms in the “annex,” which is the old 18th-century convent Le Couvent des Herbes, offer an understated elegance and overlook the herb garden, while those in the main building have a more traditional feel. Additionally, the complex has a superb spa, dance studio, two swimming pools and a 9-hole golf course; in addition, “theme” weeks are dedicated to topics such as cuisine, fragrances and wines, or landscaping.
