Yannick Alleno has been the culinary director of the Pavillon Ledoyen, a three-star Michelin restaurant located on the Champs-Elysees in the center of Paris, since July 1, 2014. He previously worked as a sous-chef at the restaurant. Yannick Alleno is managing this historic building and directing the staff of the 45-seat restaurant, carrying on the legacy of his illustrious predecessors and a tradition that has endured for generations. Yannick Alleno is known for his creativity, passion, and relentless pursuit of culinary excellence. Guests are allowed to pick one important item – vegetable, meat, or fish – for their main meal, which will provide them with an unforgettable eating experience. Chef Alleno then builds the rest of the dinner around the main dish, including the appetizer and dessert, based on his selection. A starting of duck foie gras poached in Rivesaltes wine and pear in a sugar crust, or a dessert of crab meat in squid leaf to finish the orange bead cinnamon foam, would be ideal with the poularde topped with seeds poached in Jura wine stock and panais extract, as examples. Yannick Alleno is a French chef who is passionate about the food. He has pioneered fresh research on current sauces and incorporates these new methods into each meal.
