Another visit to Philippe Chevrier’s Michelin-starred restaurant, which has two stars.
The menu was created with dishes that emphasized the importance of several game birds and roe deer species. Esteban, the maitre d’hotel, conducted the service in the manner of a conductor conducting a performance. Ingredients of the highest quality were used in the preparation of the dish by Philippe Chevrier and Damien Coche, as was flawless execution. Their cookery was distinguished by its gastronomic excellence and generous spirit.
Signature meals included a complete black truffle and foie gras pie, a woodcock, a partridge and a roe deer saddle filet, to name a few. Esteban created a dessert in front of us, which consisted of a flambée banana with white chocolate and a black truffle on top.
My visits to Châteauvieux have never been disappointing, and I believe it to be one of the top Michelin-starred restaurants in the world!
