Despite his classical training, Raue’s interest with Asian tastes permeates his cuisine, despite his classical training. While Raue was one of the first Michelin-starred chefs to experiment with Asian-influenced ingredients and flavors, it is now commonplace to find Michelin-starred chefs across Germany experimenting with Asian-influenced ingredients and flavors – Victors Fine Dining, Yunico, LA Jordan, and The Table, to name a few examples of such restaurants. Perhaps as a result, Raue’s cuisine did not strike me as stunning or controversial as it did in the chefs table episode – it was largely quite solid, with some unique tastes thrown in.
